The RotaTherm® continuous cooking system is perfect for manufacturing dairy desserts, fromage frais, whipped and foamed desserts as well as bakery cream. The RotaTherm® cooker is able to cook with high shear or low shear on the product while it is heated. Gas can be added into the product or vacuum de-aeration applied for density control.
